Small-scale production of biodiesel is used as a laboratory exercise in general chemistry or environmental science. The objectives of the laboratory are to teach a little about organic chemical structures and biochemistry as well as to reinforce an understanding of intermolecular forces and the role these forces play in determining the properties of liquids. This laboratory also serves to excite students to study more chemistry if they are interested in environmental science because they find the application interesting.
